Lemon Magic Cake – one simple batter that turns into a 3 layer cake. Simply magical. The popular magic cake now in lemon flavor. Lemon Magic Cake! Another great flavor to add to my collection of magic cake recipes. I’m still trying to decide which one is my favorite. Right now I think there is a tie between this lemon version and the chocolate version. I might choose this one because I really love lemon flavored cakes. Don’t get me wrong, I also love my chocolate, but there’s just something refreshing about this lemon magic cake. Maybe because it’s summer.  I’m glad I tried this because this cake is very special, it’s so light and delicate, truly delicious and one of my favorite cakes of all time. Tortellini Al Forno

Al Forno = Food that’s baked in the oven. (Seriously. That’s all it means.) The funny thing is that this particular tortellini recipe has evolved over time to where it’s often times not even baked in the oven anymore. (Kinda funny huh?) I’ve actually tried baking this in the oven at the end and all that it does is cook the pasta too far past the Al Dente point. And it just adds an extra step, really. Not necessary folks, not necessary. Oh, and I can’t forget to at least mention this Olive Garden Stuffed Chicken Marsala recipe. Oh, hey there gorgeous tortellini! I am a tortellini loving kind of gal. If it were up to me, I would indulge in it every single day, if I could. No one’s stopping me. Fresh green beans, ginger, and garlic are quickly sauteed with tender strips of beef before being tossed in a light savory sauce to create this Thai Steak and Green Bean Stir Fry. I’m all for quick and easy dinners most nights and this one absolutely qualifies. Unlike most stir-fries, this wholly savory stir-fry has no sweet and sour or sweet and spicy component. While my cute hubby and I celebrated his 38th birthday out of the house and without children last night (WHAAAT?!), we brainstormed ways to simplify this season. Because I just about lost it yesterday. Learning that my medically-needy son's insurance had become inactive was the straw that broke my back. My daughter is obsessed with tuna. I will buy 10-20 cans when it goes on sale, put some at the tip top of the pantry, and somehow they always disappear by time I go to make this delicious Tuna Melt. THIS TIME, I hid some in an undisclosed location (a locked safe. HA!) and was able to make this perfect Tuna Melt. It’s ooey-gooey and packed full of delicious flavor, and perfect for the nights when you just want to put something on the table super quick or for that lunch date with your friends.
